Easy Chicken Recipe

As a bit of a change from the usual interiors focus, we thought we’d share a really easy chicken recipe that’s become a real favourite of ours. It’s a year round dish that’s healthy and super easy to make.

For this recipe you will need:

  • 2 chicken breasts
  • 100g cherry tomatoes
  • 2 tbsp pesto
  • 2 tbsp crème fraiche (low fat can also be used).

1. Season your chicken with whatever you like (we tend to use a little bit of salt, pepper and some mixed herbs) and put them in the oven to cook as normal. While they are cooking halve the cherry tomatoes.

2. Once the chicken is cooked through (nobody likes their chicken medium rare) put it into a frying pan and add the tomatoes. Stir for a couple of minutes until the tomatoes have softened.

3. Reduce the heat and add the crème fraiche and pesto, stirring together until a sauce is formed.

It really is as easy as that! We tend to serve it with vegetables such as broccoli and carrots in the summer and with slightly heavier sides such as boiled potatoes in the winter.       It is pretty tasty, let me know what you think Marie! We have this one night and use the leftover creme fraiche for a low fat curry another night reducing our food waste.

    Made this tonight and it was delicious! I doubled the pesto and creme fraiche but only because I added penne pasta to it. Very yummy and one of the most easiest dishes I’ve ever made!

      I’m glad you tried it! Adding pasta is a great suggestion – I bet it was really filling.
